A slight spicy note will contrast the sweetness, and all the other ingredients will complete the perfect combination to take you straight to Kansas City.

Surely our Rib Rub is perfect on ribs in pure American style, but it is also excellent on chicken.

Simple Barbecue Recipes By Grigliare Duro Using Our Ribs Rub

AMERICAN STYLE RIBS

Ingredients:

  • 1 slab of ribs
  • Mustard
  • Rib rub
  • Apple juice
  • Barbecue sauce

First, trim the ribs by removing most of the surface fat and the pleura behind the bones.

Brush with a veil of mustard and sprinkle a generous layer of Ribs Rub.

Put in indirect cooking at 120/130 degrees smoking with cherry or apple.

After about 2 hours the bark will be formed then put them in foil adding a drop of apple juice, put again in indirect cooking for about 1 hour.

At this point open them from the foil and brush them with barbecue sauce, leaving them still in indirect for 15 minutes.

PULLED CHICKEN

Ingredients:

  • Chicken thighs
  • Rub ribs

Take the chicken thighs and remove the skin, after which sprinkle a good amount of Ribs Rub.

Put them in indirect cooking at 120/150 degrees until they reach 90 degrees.

At this point remove from the barbecue and while still hot, fray them with 2 forks.

As with pulled pork, it is excellent for making sandwiches with salad and barbecue sauce or served on a plate with pickles and fresh vegetables.

 

MEATBALL

Ingredients:

  • 70% Ground beef
  • 30% Pork mince
  • Rub for Ribs
  • Bacon
  • Fontina or similar

Mix together the ground beef and pork with a generous amount of rub.

Form into 80-100g balls and in the middle place a cube of cheese and wrap in bacon.

Smoke with cherry or apple in indirect cooking until meatballs reach 75 degrees inside. Serve accompanied by barbecue sauce.
